Salsa Chicken with Brown Rice

Eat a Rainbow this Wednesday! Presently our colourful dish that is filled with antioxidants and nutrients. The perfect combo for fighting diseases!

Serves: 2 servings

Ingredients:

  • 2 chicken breasts, skin removed
  • Olive oil
  • Salt and pepper
  • 1 cup of brown rice, soaked and cooked

 

For salsa:

  • 1 small red onion, finely chopped
  • 2 small tomatoes, deseeded and diced
  • ½ Japanese cucumber, finely diced
  • ½ red capsicum, deseeded and finely diced
  • ½ mango, finely diced
  • Small handful of fresh coriander leaves, chopped
  • Salt and pepper
  • Juice of 1 lime

 

Instructions:

  1. Using a kitchen scissors, carefully cut each chicken breast into halves lengthwise. Brush with oil and season well with salt and pepper.
  2. Heat up a pan with olive oil. Add the chicken breasts and cook thoroughly.
  3. Make the salsa by mixing the onion, tomatoes, cucumber, capsicum, mango, coriander leaves. Blanch ingredients in hot water for 10 seconds. Season with lime juice, salt and pepper.
  4. Serve chicken hot together with salsa and brown rice.

Tip: Brown rice is higher in fibre, vitamins and minerals. Choose brown rice over white rice whenever possible!
